A veteran of Australian distilling, Lark Distillery was the first new whisky distillery in Tasmania since 1839.
In the early 19th Century, the Apple Isle boasted a distilling industry some 16 producers strong, with illegal distillation widespread across the then-colony. Distilling was later outlawed, when the wife of Tasmania's Governor stated that she would "prefer barley be fed to pigs than it be used to turn men into swine.”
And that would have been that, were it not for Lark Distillery. The distillery's founder, Bill Lark, has been nicknamed "the Godfather of Australian Whisky" – and fought to get Australia's distilling laws change to allow smaller producers to distil. In 1992, Lark Distillery opened, and was quickly acclaimed for the quality of its spirit.
To this day, Lark Distillery remains at the pinnacle of Aussie distilling, producing single malt whiskies that are as delicious as they are innovative.
