Single Pot Still Whiskey is the distinctive whiskey style of Ireland – and it has a colourful history.
Like Scotland, Ireland has a long tradition of distilling single malts going back as far as the 1400s. However, in 1785, the colonial British authorities introduced a tax on malted barley – the key ingredient in the production of malt whisky!
As they say, necessity is the mother of invention, and to avoid the Malt Tax, Irish distillers began to use a mixture of malted and unmalted grain in their recipes. Luckily, drinkers loved it! "Pure" or Single Irish Pot Still whiskey became the dominant style of the spirit in the 1800s, until the rise of Blended Scotch Whisky knocked it off its perch.
Having nearly died out in early 20th Century, the Global Whiskey Revival saw Irish distilling return to prominence, with plentiful delicious options available to the discerning drinker.
