West Cork Distillers was established in 2003 by John O'Connell, Ger McCarthy and Denis McCarthy. It wasn't until 2014 the distilling operations moved to Market Street in Skibbereen. In 2020, the new distillery at Marsh Road, Skibbereen will be open, making West Cork Distillers the largest Irish owned distillery in the country. The West Cork Distillery is the only Irish distillery to malt all of its barley. The Irish Whiskey series contains a variety of cask editions including the signature Bourbon cask to peat charred, bog oak, virgin oak and port casks.
Also, the West Cork 1- Year Old Single Malt; West Cork Original and The Pogues Whisky has become stand out whiskies, each made with Irish grown grain and spring water and malted barley before being triple distilled. The West Cork 10-Year-Old signature single malt whiskey is matured in bourbon barrels. It will leave notes of green apple, stone fruit and nougat, alongside some malty and rich caramel, finishing off with a warming gentle spice.
