A rare example of a smoky Australian single malt. This dram has been made with “Defiantly Peated” barley imported, not from Scotland, but from Belgium! Bakery Hill do already have a peated offering, but this dram kicks things up to new levels, almost doubling the number of phenols in the whisky. A limited edition whisky, highly limited in supply.
Bakery Hill is one of Australia’s older distilleries, dating all the way back to 1999. For over two decades now, the distillery has put Ballarat on the whisky map, with the location previously best known for being the scene of the Eureka Rebellion. It seems the area has an affinity for Australian Spirit!
This bottling is a small batch production containing the outturn of three 225 litre former Bourbon barrels, with the whisky aged for about 8 years. The final product is a dram with a profile perfectly balanced between sweetness and smokiness, presented without colouration, chill filtration and at a warming 50% ABV.

Intense peat smoke bombards the drinker, with a thick, sooty character. Some tobacco smoke emerges, accompanied by earthy ginger, clear honey and dark chocolate.
Faithful to the nose with plenty of peat. Some honeyed malt and fresh oak comes with time, alongside a lemon rind note and black pepper prickle. A full, buttery mouthfeel.
Long and smoky with undercurrents of barbequed pineapple and peach. One of the peatiest Aussie whiskies ever, and it packs a punch.
