Exclusively aged in bourbon casks, the Irish Whiskey is as close to Scotch as you can get without being so. Dense caramels drive this whisky, as it feels weighty and dense on the palate. Surely the first whisky to convert any Scotch traditionalist.
Wicklow, R.I., Ireland
This very special whiskey herald’s a second coming of Irish single malt. Glendalough was the first in the wave of new Irish distilleries. Taking the single malt back from the distillers in Middleton and Cooley, these single malts have changed the worlds perception of Irish craft whiskey.
The story goes... A group of passionate whiskey consuming mates went out to shake up the local market, make some juice they really loved and sample a few casks along the way.
Built on top of the ruins of a monastery (hence the monk on the bottle), the juice is being created in what may be the most beautiful part of Ireland. Regardless, there's no gypsy distilling here, so crack in!

Deep butterscotch, honeycomb and rich lemon meringue balanced with citrus fruits and just a hint of clove.
An intense vanilla fudge luxurious sweetness mixed with touches of citrus, peach and dried apricot, followed by deep spices
The spice is left lingering with underlayers of malt and deep oak notes. And again vanilla fudge reoccurs with a finish that lasts an eternity.
