One of the best reviewed young scotches on the market right now, Glenglassaugh have a unique ageing process. Instead of standard bourbon maturation, the whisky utilises first fill premium George Dickel (Tennessee Whisky) Barrels. Where standard bourbon focuses on more mellow vanillas and caramels, Tennessee Whisky focuses more on brighter fruits and stronger spices.
Part of Glenglassaugh's return, which despite changes of ownership looks set to be a triumphant one if Evolution is anything to go on.
Bottled at 50%, natural colour and non chill filtered, Evolution represents the heart of Glenglassaugh’s distinctive personality, and a move back towards prioritising quality. We're all happy to see it.
Glenglassaugh Distillery stands at the east end of Sandend bay approximately two miles to the west of Portsoy.

Tennessee Whisky Barrels impart a huge nose. Liquorice, orange rind, green apple, honeycomb and soft vanillas. Drops of water remove the pinch of alcohol, introducing burnt peanut butter with earthiness, banana, grainy brown sugar, lemon candy, sarsaparilla and extra vanillas and caramels.
All the good bits of fruity new make with a creamy mouthfeel that interacts with caramel, chocolate and a progressively intensifying oak as the barrel character returns with a sharp pineapple burst. Water adds rum and raisin, honeycomb, lemon flavoured cough drops.
Lingering spicy raisin notes and that delicious oily barley that remains unique to young whiskies linger. Water again enhances fruits here
