Killara is a distillery with fantastic pedigree, operated by Kristy Booth-Lark, of the famous Lark family of Australian distillers.
It was Bill Lark who first kick started the Australian whisky renaissance, when he founded Lark Distillery in Tasmania back in 1992. Killara’s name is a knowing nod to this history, having been taken from the street of the first Lark distillery.
Kristy has taken up the mantle – one of very few women in the whisky business to entirely own and operate their own distillery. She has over 18 years of experience in the whisky business, and a first hand knowledge that is second to none in Australia. With such a rich history, Killara’s whisky has a lot to live up to. Lucky, it more than matches expectations, with heaps of character and complexity.

Initially, it’s the rum barrel that shows up – with tropical fruits of grilled pineapple and mango taking hold, before aromas of dried fruits, toasted nuts and malt appear.
More Apera here, with a wave of decadent plums, figs and dried fruit. Nutmeg, vanilla and oak spice emerge later, alongside a little brown sugar sweetness and an extra serve of pineapple.
Full and long, the Apera cask showing a little tannic and drying, though balanced nicely by rum and raisin ice cream, and a touch of citrus rind.
