This bottling was the brainchild of Head Distiller Chris Thomson, taking Tawny-matured Classic Cask spirit from the Coal Valley distillery and finishing it in a single Australian Tawny fortified wine cask from the Seppeltsfield Winery in the Barossa Valley. Expect heaps of rich fruit from this juice.
Lark’s Coal Valley distillery is known for producing spirit with a wide flavour profile, encompassing a little bit of everything – from sweet vanilla, to dried fruits and even a touch of Tassie peat smoke. Such balance and poise makes this new make extremely well suited to wine cask maturation, with the spirit able to stand up to the intense fruitiness of Tawny casks.
This is Lark’s signature Classic Cask with the Tawny character turned way up. Frankly ludicrously fruity and dessert-like, just 1,000 bottles were produced.

Fudgy dark chocolate leaps out of the glass, followed by baked apples, blackberries, tobacco leaf, polished oak and leather furniture. Think old fashioned study.
Creamy on the palate, with zesty orange peel and cinnamon spice brightening things. Vanilla custard, fresh pastry, dark oak and mocha all pop up.
The citrus fruit transforms to plums and cherries here, with lasting notes of gentle peat, dark oak and leather in this lingering finish.
