Founded in 1992, Lark is the distillery that kickstarted the craft distilling revival in Australia. Despite this relatively lengthy history, this bottling is the very first blended malt from the Aussie veteran.
A symphony of flavour, delivered by an orchestra of Tasmanian malt whiskies specially selected by Head Distiller Chris Thomson.
The brainchild of founder Bill Lark, the distillery was the first in Tasmania to receive a new distilling license for over 150 years.
Whisky from American oak, former sherry and ex-port casks come together in this blended malt to produce a well-balanced, flavoursome expression. Unlike blended whiskies, this blended malt contains no grain spirit. Instead, Symphony No. 1 is made entirely with malt whisky from some of the best-known distilleries in Tasmania and is bottled without chill-filtration or colouration, ensuring a natural final product with a luscious mouthfeel.

At first, rich raisins with an approachable malty sweetness. Opens up to reveal freshly cut melon, creamy vanilla and notes of overripe pineapple and banana.
Honey and malty biscuits are brightened by freshly cracked black pepper and grapefruit. The tropical fruits of the nose return, alongside some dark chocolate, oily nuts and floral notes.
Think spiced hot chocolate and honey on toast. A little sherried oak rounds out this medium-length finish perfectly.
