Nose

Light and breezy with plenty of fruit. Plums and peaches are prominent alongside sultanas and raisins which offer a subtle festive spiciness. There is a gentle underscoring of sweetness; mainly vanilla and butterscotch which follows through onto the palate.

Taste

The rich sweetness arrives early complimented by hints of nutmeg, coconut, and cinnamon. Like an old-fashioned Christmas cake, all dried fruit and icing sugar. The Australian sherry finish is in here too adding to the soft spiciness with just a hint of tannin.

Finish

Not as long as the palate might suggest and oilier than you might expect. The sweetness remains but the spiciness really comes out here with plenty of pepper and cinnamon.

The Limeburners Sherry Cask Single Malt is a fascinating small batch single malt and a special addition to the Australian whisky canon. It is distilled in the small Western Australian town of Albany using exclusively southern Australian barley and a combination of soft and hard waters collected from nearby limestone aquifers.

While billed as a sherry cask, this single malt is actually matured in second-fill bourbon barrels before being finished for an unspecified amount of time in Australian sherry casks. This means that while the sherry hints are there, they are not as powerful as some other sherry-cask single malts.

There is no age statement but Limeburners typically ages its casks for between three and nine years. Each bottle of the Sherry Cask is individually numbered highlighting the fact that this is a small batch production and a special addition to any whisky collection. While this is a fairly mild whisky, there is plenty going on under the hood. To get the most out of it, serve this one with just a splash of water to bring out the flavours.

Tasted this in our taster box. I originally didn’t like limeburners but the sherry cask was definitely better and I’m glad I got the chance to try it. Smelled like butter baking and sultanas. Has a delicious butterscotch flavour and a wee bit Christmas cakey. On the Rocks was preferred, if you like a little bit of mixers, we found ginger ale brought out the spice tastes and coke brought out the sweetness.
