The result is the type of refined blends that the Japanese are renowned for: this whisky is very smooth with notes of green apples and marzipan, as well as the typically Japanese notes of Sandalwood.
The current Mars distillery is owned by Hombo Shuzo and is built 798 meters above sea level, amongst the Alps of Mt.Komagatake. This makes it the highest situated distillery in Japan. Therefore, it's quite a feat that the distilleryās high quality water source is drawn from 129m below ground level.
The pot stills used were designed by first master distiller Kiichiro Iwai, based upon the records left by Masataka Taketsuru, and, in fact closely resemble the straight-head stills used at the Yoichi Distillery. As Mr. Iwai was mentor to Masataka Taketsuru, who is seen as the founder of Japanese whisky, he is referred to by some as \"The Silent Pioneer of Japanese Whisky.\"
