Rochfort is a family-owned distillery located just outside Adelaide in South Australia. It has a long history of producing wine, mead, and honey-wines and has put all of this experience to good use in developing its unique range of whiskies.
The White Port Single Cask is uniquely special thanks to the casks it has been matured in. These Maxwell White Port Casks were filled in the 1960’s and then buried in limestone caves on the Maxwell estate until the year 2000. They were then dug up and left to bake in the South Australian sun.
This process drove the cask flavors into the port and the port fruitiness into the oak and this character has now been infused into Rochfort’s rich and delicate whisky. It is beautifully balanced and sweet and also packed with fruit and spices.
Almost all Rochfort whisky is produced in limited numbers and sells out quickly. The opportunity to sample this unique dram is a truly special one.
