This is an impressive whiskey. Very tasty considering the high ABV. Complex palate and long finish. This is a dram that gets better given some time to breathe. It can be a little harsh if you drink immediately after pouring.
Letting it settle in the glass for about 15 minute does wonders. There is a distinct Irish soda bread thing happening. Biscuity (pie-crust?), mildly sweet, ever so slightly salty, with a pleasant tang of dried fruits like apricots and raisins.
Finishes with sweet spices, a hint of lemon and some vanilla, with some toast and nuttiness present from the sherry cask aging. If you enjoy single pot still Irish whiskey, this is an absolute must-try and a tremendous improvement over the standard 12 year old bottling.
