An all-time classic Irish single pot still whiskey. Known as the “priest’s tipple” in Ireland, this bottling is seen as a cut-above in whiskey circles. The dram was matured in a combination of Oloroso sherry and bourbon casks, producing a rich final product with plenty of sweet unmalted barley notes
Single Pot Still Irish Whiskey
In 1785, the British introduced a malt tax to Ireland. In response, Irish distillers began to include more unmalted barley to their mashbills. As ever, necessity is the mother of creation, and this unusual combination of malted and unmalted barley distilled in traditional whiskey stills produced a new, distinctively Irish style: single pot still.
The new variety was a runaway success – by the 1880s, only two of the 28 distilleries operating in Ireland was dedicated to Scotch-style single malts, with the rest totally devoted to single pot still. Redbreast 12 Year Old is the perfect introduction to this superb style.

Toffee, toasted almond and walnut greet the drinker, followed by waves of grassy fresh barley, gingerbread, candied orange peel and juicy rockmelon.
A little more sherry character here: nutmeg, raisins and prunes, accompanied by marzipan, more herbaceous barley, dark oak, a little malt and lemon rind. Full-bodied and intense.
Custardy and long, packed with decadent vanilla and subtle allspice. Sherried oak lingers on the tongue.
