Starward Distillery are all about celebrating great Australian produce – using 100% Aussie barley and Australian red wine barrels for their whiskies. It should come as no surprise then, that when they wanted to create a single malt in the traditional Sherried style, they looked a little closer to home.
Since 2010, any Australian wines made in the Sherry style are given the name Apera. From a whisky-making perspective, Apera offers the same delightful fruity, nutty and spicy qualities to drams that Sherry does.
Heightening this dram’s Apera connection is the use of the Solera system, common to the Sherry industry. This style of fractional blending sees younger spirit replace the older whisky as it is bottled – leading to a more consistent final product that hits a perfect balance of young and old.
