The West Cork distillery is one of the new wave of distilleries that have opened across Ireland since the Millennium. It has also been one of the most successful distilleries in the current new wave of Irish whiskey distilling.
This 12 year-old single malt is one of a trio of whiskey’s launched in 2016. This particular dram was matured in first fill Bourbon casks & finished in Bodegas Baron sherry casks. As you would expect, this has imparted a sweetness and fruitiness that is not found in all of their whiskies.
While it does lack the complexity of some other 12 year old single malts, its simplicity is in many ways an advantage. It effortlessly all the usual qualities of a West Cork whiskey with the fruitiness and sweetness that only sherry casks can bring.
The result is a deluge of dark fruits, vanilla, and caramel on the tongue that recede into a gentle spiciness that leaves you reaching for your next sip. The sweetness means this dram works best neat but is also fine over ice or with the smallest dash of water.

Red grapes, vanilla, and soft fruits combine with the underlying sharpness of raspberries and wild herbs.
A fruit salad of peaches, apricots, strawberries and bananas all soaked in just a little bit too much syrup. A little oak makes it through alongside vanilla and those fresh herbs, but the sweetness dominates.
Long and succulent as the sweetness vanishes over the horizon to leave the oak spices and hints of cinnamon and cumin.
